Amaretti (macaroons)

The “Amaretti“ are one of the most popular Sardinian sweets.

Ingredients

350 grams sugar, 300 grams sweet almonds, 100 grams bitter almonds, whites of 3 eggs, icing sugar, flour for the baking tray, rice paper.

Remove the skin from the almonds and dry them out.
Once cooled, use a mortar to crush them with the sugar.
Spread the rice paper on the baking tray and sprinkle with some flour. Beat the egg whites, mix them with almonds and sugar. Create some rounds of pastry, sprinkle them with icing sugar and leave to cool down for a couple of hours.
Put the amaretti in the oven to 120° for one hour. After the cooking, sprinkle with more icing sugar and leave it to rest in a dry place.
