Production area: hilly areas of Basso Sulcis, in the South-West of Sardinia. Clay-limestone soils, Mediterranean climate with mild winters and low rainfall, warm and windy summers.
Guyot-trained vineyard, planting density: 5000 plants/ha, average production of 9 tons/ha.
Vinification: Fermentation with maceration at 24-26°C for 10 days. Refining in steel tanks and concrete vats. Short refining in bottle.
Food Pairing: Pasta with meat sauces, meat roasts, medium aged cheese.
Serving Temperature: 18°C. Uncork the bottle 30 minutes before serving.
Winemaker suggestion: Desèa is a modern version of Carignano del Sulcis doc, fruity and fresh, with silky tannins. This wine benefits a period of bottle refining, in cool rooms away from light, up to three years.
