Vines: obtained from the grapes of our native vines, 35% Bovale Sardo (Muristellu), 35% Cannonau, 20% Monica and 10% red grapes of the territory
Type of soil: medium-textured granite decay soils, positioned at 550 m a.s.l.. Southeast exposure
Production area: Mandrolisai hilly land in the countryside of Sorgono. One single vineyard of about 80 years, 1500 plants with low yield. Plants raised with the sapling technique
Harvest: traditional, careful selection of the grapes by hand and collected in plastic boxes
Vinification and aging: the selected grapes are destemmed and stored in stainless steel tanks. Fermentation is started with maceration that lasts about two to three weeks, with continuous manual fulling and delestage. At the end of the first fermentation the aging takes place in large oak barrels of 500 l. for 8 months, during which the battonage takes place and the manolattica takes place in cask. Bottling takes place in September
