Harvest:
last days of September, careful selection of the grapes by hand, all varieties collected imultaneously in plastic boxes
Vinification and aging: the selected grapes, at the right ripeness, are destemmed and stored in stainless steel tanks for three days with controlled temperatures at 4-5 ºC, for pre-fermentation maceration. Fermentation is started and maceration lasts from 20 to 25 days, in order to enhance the fruity notes. During fermentation, continuous pumping over and delestage are carried out. Stainless steel storage for 6 months with bottling in July
