Characteristics: purple red color, at nose reveals balsamic notes, velvety tannins, vinous, pleasant drink that fills the palate. Expresses its best in the second year in bottle

Vines: obtained from the grapes of our native vines, 80% Bovale Sardo (Muristellu) and 20% red grapes of the territory

Type of soil: granite decaying soils with an important sandy component, positioned at 500 m a.s.l. Southeast exposure

Production area: old vineyards over 90 yeasrs. Mandrolisai hilly land in the countryside of Sorgono and Atzara. Plants raised with the sapling technique with low yeld

Harvest:

last days of September, careful selection of the grapes by hand, all varieties collected imultaneously in plastic boxes

Vinification and aging: the selected grapes, at the right ripeness, are destemmed and stored in stainless steel tanks for three days with controlled temperatures at 4-5 ºC, for pre-fermentation maceration. Fermentation is started and maceration lasts from 20 to 25 days, in order to enhance the fruity notes. During fermentation, continuous pumping over and delestage are carried out. Stainless steel storage for 6 months with bottling in July

Recommended serving temperature: 16-18 ° C

Matching: stewed meat and seasoned cheeses
