Visual and sensorial characteristics: golden yellow with green reflections, sophisticated scent of thistle and artichoke. The taste is velvety, balanced in fluidity, bitter and spicy present but harmonious.
Recommendations and combinations: Ideal raw on salads, fish and grilled meats. Enhances simple and genuine dishes such as caprese or bruschetta.
Harvest period: October-November.
Production method: The olives are harvested manually from the trees at just the beginning of veraison and, after having washed and defoliated them, they are ground on the same day in a two-phase oil mill, obtaining oil at low temperature. Before bottling, we preserve the oil under nitrogen in steel tanks at a stable temperature to minimize oxidation. The result is an oil with very low acidity and rich in polyphenols.
Who we are: In the Sulcis area, in south-western Sardinia, the origins of agriculture date back to the dawn of island civilisation. A tradition developed over the centuries by different peoples: first the Nuragic civilization, of which several archaeological testimonies remain, then Sulcis became a Phoenician colony although coexisting with the Nuragic people. In particular, the Phoenicians founded the city of Sulki, today's Sant'Antioco and which gives its name to the area in which it is located, Sulcis. In 238 BC the whole of Sardinia became, at the end of the First Punic War, a Roman province and remained so for about seven centuries, becoming one of the main granaries of the city of ancient Rome.Our commitment, as in those distant times, is to continue to collaborate with Nature to provide us with excellent products from the Italian land. In the Crare Luxi agricultural company, which has an estate in Giba and one near Iglesias, every activity is in fact designed with respect for tradition but paying the utmost attention to what technology can offer to improve the quality of the products and the service to our Customer.
The Crare Luxi agricultural company in conversion to organic and which will have certification at the end of 2024, bases its activity on the application of innovative agriculture where authenticity and sustainability are the main values. These are objectives that we have pursued with enthusiasm since we started our business: first with the recovery of existing olive groves and then by installing new ones.
