The wine comes from a vineyard of approximately 8800 strains of Hamburg Moscato, it is harvested when the sugar level reaches 20 degrees, it is ground and placed in tanks where it undergoes a three-day maceration with the same skins, there is spontaneous fermentation and without the addition of yeasts and temperature control, once the various fermentations have been completed, including malolactic, we proceed with the first three decantings one month apart from one another, naturally with a good moon.
Before the last decanting, the wine, still in the tank, undergoes two months of concrete mixing, i.e. a rest with fine lees. Subsequently we proceed with six decantings and finally a very light filtration before bottling.
Dry Moscato di Tempio with varietal aromas, goes well as an aperitif, with spicy first courses and with all types of cheese, including blue ones
