Always reckoned to be the most prized part of the tuna, the belly is made out of the fleshy covering of the fish´s ventral compartment. It is one of the most suitable ingredients for making sushi and as such much sought after in Japan, where it is called “toro”. As with Tonno, we recommend you enjoy Ventresca with vegetables, specifically with chickpeas which provides the best combination for taste.
