Winemaking method: grapes are handpicked and rapidly brought to the plant nearby, where they are destemed, crushed, cooled and processed through a inert vaccum press. The mash obtained is held in a decanter for 24 hours, after which the cleaned must is syphoned and left fermenting for 20 days in thermally controlled stainless steel tanks. At the end of the alcoholic fermentation the wine is syphoned in bottles and left to refine.
Refinement: 10 months in stainless steel tanks with often battonage of the mass,one part mass is worked in wood tank 20 hl.
