- collection and processing within eight hours;
- accurate washing;
- crushing of olives by steel knives;
- vertical malaxing inert;
- two-phase separating decanter;
- filtering by paper.
Storage times and methods: storing of the olive oil in stainless steel tanks, reaching temperatures of about 14 to 16 °C and use of vacuum packed technique in order to guarantee a good shelf-life.
