HARVESTING METHOD - WINE MAKING AND AGEING: Careful manual selection of the grapes, spontaneous fermentation at controlled temperatures for about 10 days in stainless steel tanks where the malolactic fermentation also takes place. After 8 months, a light passage is made in 225-liter barrels of at least fifth passage, while the bottling takes place at 12 months and refining in the bottle for another year.

SENSORY PROFILE COLOUR: Ruby red with violet reflections, consistent, lively and with a slight transparency
BOUQUET: Quite intense, complex and fine, it immediately gives sensations of fresh fruitiness of red fruits and gooseberries, currants and black cherries. It continues on pleasant spicy notes that recall a gentle black pepper followed by floral hints of cloves and a finish of undergrowth.
FLAVOUR: Tense, dry and soft sip, for a glass of excellent freshness and an immediately evident tannic texture. Intensity, persistence and taste quality, give the sip pleasant hints of red fruit and spices
SERVING DETAILS SERVING TEMPERATURE: 16-18° c
FOOD PARINGS: Excellent with meat-based dishes of the Sardinian tradition, again with game, pork ribs and aged cheeses. Served cooler, we suggest pairing with dishes such as tuna steak or braised tuna in red wine.
