VARIETY: 100% Nebbiolo
VINIFICATION: Careful selection and strictly hand-picked grapes in the vineyard, soft pressing with destemming. Fermentation with maceration for 15 days in stainless steel with frequent pumping over and subsequent malolactic fermentation.
MATURATION AND REFINEMENT: always in steel tanks where it stays for at least a year, followed by further refinement in the bottle, no less than 3 months, until commercialization.
ORGANOLEPTIC CHARACTERISTICS: intense ruby ??red colour; the nose recalls aromas of ripe red fruits, with slight herbaceous, vegetable notes, star anise, licorice in evidence, young tannin present but not aggressive, long, persistent with good character, full and enveloping taste.
GASTRONOMIC COMBINATIONS: it goes well with appetizers, Mediterranean first courses, cured meats and cold cuts, hard cheeses.
SUGGESTED SERVING TEMPERATURE: 18° in large goblets to favor prompt oxygenation.
