Aubergines preserved in oil are the preserve par excellence of the Italian food and wine tradition. At Ayo' we prefer black aubergines, as their pulp is compact and more resistant to storage. They are sliced ??and seasoned with oregano and chilli pepper, which give them a fresh and delicious taste. They are excellent as a side dish for meats and cheeses, as an appetizer and for filling sandwiches with a summer flavor.
