Treslizos extra virgin olive oil is produced from Semidana olives, a variety to which we are particularly attached because it is native to the province of Oristano, our homeland. The olives are grown using organic methods in fertile soil in our centuries-old olive groves. The olives ripen from late November to early December, but we harvest them between late October and early November as we practice early harvesting. The extraction is done with a modern continuous cycle two-phase mill using mechanical processes. The oil is filtered, preserved under nitrogen, and bottled as needed.
CHARACTERISTICS: Treslizos oil is a single-variety extra virgin olive oil with a yellow-green color and a medium herbaceous fruity flavor, with hints of artichoke, thistle, tomato, and mown grass. It also has fruity notes of almond and balsamic undertones. On the palate, it is persistent with pleasant bitterness and spiciness, and a lingering artichoke aftertaste.
SUGGESTIONS AND PAIRINGS: It is ideal for appetizers and seafood dishes, such as raw seafood and tuna and shrimp tartare. It pairs perfectly with bottarga (fish roe) and artichokes, as well as seafood pasta dishes with clams and shellfish, and land dishes such as malloreddus (Sardinian pasta) and ravioli. It also complements vegetable creams and velvety soups.
