The ´Cannonau Nieddu´, praised by gourmets, wine-experts and artists, is a sophisticated wine that improves everyday with old age.Serving suggestions To be served at a temperature between 20° and 22°C. This wine is excellent with tasty meat, game and strong cheeses.
General characteristics: the colour is a deep ruby-red. This wine developes soft smells of mature cherries and sweet spices, like clove and cinnamon. With such a nice personality, it offers vigour and softness to all dishes. It matures in barriques for at least 12 months and it´s good with dishes like the ´Coniglio a´ succhitto´ ( Sardinian typical dish).
Grapes used: Cannonau 92%, a small percentage of Carignano , Muristellu and Pascale. Product obtained from one stump: 2 kilos.
Methods of production the soil is splintery and calcareous. The depth of the soil is remarkable: that helps the roots to find the water they need.Wine-making: The grapes are fermented at a temperature between 26° and 32°C. The fermentation is obtained naturally and in a short time, thanks to the low content of acidity. At this point , the Cannonau is kept to age in traditional casks for a few months; finally, it´s moved to the bottle for refinement.
