HARVEST: Hand selection of olives in November.

CULTIVAR: 100% Bosana.

PROCESSING: Washing and selection of the olives, which are then subjected to a delicate two-phase continuous-cycle pressing within a few hours of harvest.

ORGANOLEPTIC CHARACTERISTICS: Intense golden-yellow color with green hues; on the nose, it shows elegant and complex fruity notes, with clear hints of exotic fruit, apple, and Mediterranean flowers. Soft on the palate, it has good fluidity, with bitterness and pungency clearly present yet never unbalanced.

PAIRINGS: Antichi Uliveti offers unique versatility in the kitchen, thanks to its elegant fruity notes and perfect balance of bitterness and spiciness. Used raw, it is ideal for enhancing the freshness of salads, vegetable soups, and rustic dishes, adding depth to vegetable flavors.
