Serving suggestions: serve at a temperature of 18°C. Leave the bottle preferably uncorked at least two hours before serving or ideally poured into a decanter. Perfect with all red meats, as well as game and mature cheeses.
General features:The colour is deep ruby red at the beginning, then becomes warmer and less intense with ageing. The scent is wild in the first year, then matures creating a more complex bouquet with violet inklings.
The taste is dry, harmonious, with a light hint of plums and wood.Grapes used: Cannonau, the most popular red vine in Sardinia, is wild and proud like the inhabitants of the island. It is well-known in France with th name of Grenache; in Spain, Alicante and in Veneto with the name of Tocai Rosso.
Methods of production Harvest-time: late autumn, when the grapes are starting to dry up.The grapes are,then, pressed and soaked for about three days. The fermentation lasts 15 days at a temperature of 22-24°C. The maturing is obtained in 2 years in the usual, traditional casks, kept in cellars without any direct light. A further period spent in the bottle completes the ageing of this lovely wine.
