It´s a seasonal semi-cooked hard cheese, made with full fat sheep´ s milk, curdled at 38°C, salted in brine for 30/60 hours and finally, put to mature for 2-5 months.
Serving suggestions: it is essentially a table cheese, excellent if grilled or used for cooking. To be served accompanied by a lovely mature white wine or a young, soft, red wine.
General information: it is round-shaped with a diameter of cm 18-20, weighing about kg 2,2-2,7. The rind is smooth with a dark yellow colour. The cheese is white, granolous, delicately scented. The taste is sweet with a persistent aromatic tone. Fat: 51%.
