Seasonal cheese made from the milk of pasture-raised sheep. Whole, pasteurized, enriched with selected starter whey, coagulated at 38°C with liquid bovine rennet, brined for 30-60 hours, with an average maturation of 2-5 months.
Serving suggestions and pairings: table cheese with excellent performance on the grill and in culinary preparations. Best paired with a “mature” white wine, even slightly fortified, preferably fruity; if red, choose a young and fairly soft one; if rosé, opt for a warm and smooth style.
General characteristics: cylindrical shape, various diameters 18-20 cm, height 9-10 cm, weight approx. 2.2-2.7 kg; smooth and slightly grooved rind, color ranging from yellow-brown to hazelnut, medium thickness.
Paste: white to pale straw, depending on aging; compact, fairly soft and elastic, with moderately distributed eyes; fragrant with hints of vegetables and dried fruit; pleasantly sweet, properly savory, slightly buttery, with a light granularity but excellent solubility and aromatic persistence; fat on dry matter approx. 51%.
