The " Peretta S´ampulla " is made of semi-skimmed cow´s milk with added coagulated cattle milk; all prepared manually and at last salted in brine. The maturing is fast: only 7 days. To be served after 30 days.
Serving suggestions: It can be eaten as a table cheese, used in a variety of ways. The wine to match has to be young,fruity, white with a light structure.
General information: The shape reminds you of a small pear with a diameter of about cm 10, cm 14 long and a weight of gr 900. The rind si yellow, elastic with a delicate scent of hazel-nuts. It´s tasted and soft to become more consistent with age. It has, also, a pleasant hint of acidity. Fat: about 48%.
