General information: The colour is an intense ruby, typical of the traditional " Monica " wine. The scent is intense vinous. The flavour is acid and rich.But the final taste underneath is sweet, typical of the " Monica "wine.
Grapes used: Monica 90%, Carignano 5% and Bovale 5%. Product obtained from one stump: 1,5 kilos.
Methods of production Wine -making: the grapes are healthy, flavoury, sweet and rich in tannins, thanks to the sunny days of the island.
The fermentation of the must lasts about 8-10 days at a temperature of 27-28°C. Afterwards, the wine is kept to age in traditional wooden casks at room temperature.
