The grapes are strictly selected, kept in boxes where they are cold-pressed. The must obtained starts to ferment with some local yeasts for few weeks at a temperature of 17-20°C.

That´s when the Costarenas is poured off into wooden barriques to start the process of ageing, which lasts until April, time of bottling.

Grapes used: Vermentino 90%, other traditional varieties 10%.
