Obtained from heat-treated whole sheep´s milk; semi-cooked, white-straw yellow interior with small sparse eyes. With its pleasant taste, it makes an excellent table cheese for rounding off a meal; if matured longer, it may also be grated.
The milk is curdled using kid rennet, whence its distinctive taste. The wheel bears the pattern of the reed baskets in which it is moulded. The rind is of brown colour.
