Cheese made from whole sheep's milk with a very low bacterial count. It belongs to the category of semi-cooked cheeses. The paste is compact and finely granular, with an almost flaky texture, melting pleasantly on the palate and offering a full-bodied flavour typical of aged Pecorino cheeses. Excellent as a table cheese, at the end of a meal, or for grating. The paste is white, tending towards straw yellow.
