Cheese obtained from whole sheep´s milk with negligible bacterial content. It belongs to the class of semi-cooked cheeses. The interior is compact, fine-grained, and can be broken off in flakes, it tends to ´dissolve´ on the tongue, and has the typical strong flavour of mature pecorino cheeses.
Excellent as a table cheese, whether during or at the end of meals, and for grating. The interior is white, tending to straw yellow.
