Vineyards and method of cultivation: vineyards of Benatzu Coloru (Serdiana); traditional sapling.
Vinification, refinement: vinification in pink of the red grapes after a partial maceration for twelve hours, after which follows a light cleaning of the must. The fermentation follows at a constant temperature of 16° C. for two weeks in stainless steel vats. A small filtering of the most precedes the bottling when is still young to preserve aroma and freshness.
Tasting: brilliant cherry rosé. Intense aroma of little red fruits: cherry, raspberry, blackberry with floral notes and a little salty tang. Elegant and intense bouquet. Suave flavour, with a pleasant nose-palate harmony and nice acidity. Good structure and persistence.
Suggestions for use: as an aperitif, with fried seafood, i.e. calamari or fried vegetables. Seafood starters and non spicy light salami. Risotto and pasta with vegetables and light main courses. Serve at 12° C. uncorking at the moment of decanting.
