ALCOHOL CONTENT: 14.50% Vol.
PLACE OF ORIGIN: vineyards in the Is Solinas locality, Gulf of Palmas, south-western coast of Sardinia (Sulcis).
SOIL COMPOSITION: Mainly sandy, with clay and sandstone components.
GRAPE VARIETIES: Carignano plus small quantities of Sardinian Bovale (5%).
HARVESTING: performed when the grapes are fully ripe, almost over-ripe, to obtain tannins with the mellowness and softness typical of Carignano.
WINEMAKING TECHNIQUE: fermentation and maceration at controlled temperature, for an average period of 10-12 days with aeration and straining, using the technique known as &lquote;delestage&rquote;. Transfer to cement vats, malolactic fermentation and clarification by means of static settling. Subsequent transfer to barriques.
DEVELOPMENT: short stay in the barriques. Passage to bottles by simple decanting for very light fining and without filtering. Left to mature in the bottle for a few months.
CHEMICAL CHARACTERISTICS AND TASTING NOTES: ruby red in colour with violet tinges, intense lingering scent with decided notes of ripe fruit and jam. Full-bodied, warm and harmonic flavour with persistent fruity notes.
