SOIL: calcareous, soils deriving from marly limestone sediments.
GRAPE VARIETIES: Nasco with a small percentage of Vermentino.
CLIMATE: Mediterranean, with mild winters, limited rainfall, hot breezy summers.
HARVESTING: By hand, in the early morning hours.
VINIFICATION TECHNIQUE: cold maceration, soft pressing, natural decanting; fermentation at controlled temperature, maturation on its noble lees for about 60 days. A small portion of the must is fermented and left to develop in small French oak barrels.
TASTING NOTES: colour: straw yellow.Nose: ample, harmonious scent, with notes of yellow blossoms, tropical fruits and underlying light mossy notes.Palate: mellow and enveloping, with flavours nicely matching the nose and long, pleasant finish.
FOOD MATCHES: seafood starters, culurgiones (Sardinian ravioli) with potato filling and mint sauce, seafood risotto, artichoke risotto, seafood pasta, stewed and grilled fish, white meat, medium-matured cheeses.
