Extra Prickly Pear Jam.
Pleasantly sweet, the fruit retains its wild character. Thanks to the low amount of added sugar, the jam preserves its distinctive qualities. With a rich, thick texture, this jam is exceptional in both sweet and savory preparations and reaches its highest expression when served with goat cheese spread on warm bread.
INGREDIENTS:
Origin: the prickly pears in these jars were harvested in mid-September from plants growing in the countryside of Tula (SS).
Preparation: once harvested, the fruits are washed, boiled whole (including peel and spines), and then passed through a sieve. Only after these initial steps are they boiled again with a small amount of sugar and a little lemon juice. As the fruit is naturally sweet, the sugar quantity is reduced to preserve its original flavor.
Serving suggestions: recommended for making traditional Sardinian desserts, such as tiricche. It is also excellent spread on aged cheese and paired with white wines, rosés, or young fruity red wines.
