Climate: Mediterranean, rainy in spring andautumn, hot and windy in summer, with significant temperature fluctuation.
Soil/terroir: Sand from decomposed granite Harvest Traditional, handmade to save grapesintegrity
Winemaking: After destemming, cryomaceration (coldmaceration) of grapes for 12/24 hours, soft pressing and flower mustclarification. Low-temperature fermentation in stainless steel tanks (13-15 C°)for 10/15 day, than refining with lees for 7/8 months, and further refining inbottle for 2 month.
Colour: straw yellow with greenglints.
Flavor: delicate smell of orangeblossom and maquis (mediterranean shrubland). Fruity notes of pineapple andgrapefruit.
Taste: Delicate, well-structured,slightly soft with intense mineral sensations, sapid and fresh. Balanced andelegant. A pleasant bitterness completes its profile.
Pairings: Drunk it as an aperitif, or pairedwith dishes based on shellfish and seafoods, medium aged cheese, full-flavoredand delicate cold cuts.
