In the area of Bonnanaro, in Meilogu, the Cannonau vine fully manifests its austere character. Our Monte Santu vineyard is in the heart of the most devoted area for vineyards. In the core of Monte Santu vineyard we selected few vine´s rows - for their particular exposition - for a limited production of grapes. This Cannonau Riserva wants to be the essence ofa wine coming from the Cannonau grapes as it comes from this part of Sardinia: elegant, powerful and balanced.
Appellation: Cannonau di Sardegna D.O.C.
Variety: Cannonau 100%
Vineyards: Monte Santu Vineyard is composed by siliceousand granite sand on a thick layer of clay. Placed at 400mt above sea level. Moderatelyloose-packed soil, plant density 5.500stumps/ha.
Date Harvested: Starting from the second week of October. Average yield per Hectare: 40 quintals per 25 hectolitres of wine to refine
Vinification: Maceration of pressed grapes prolonged for 15/18 days inside steel wine-makers, with thermal control. To follow many wine-rackingup to refining period.
Refining: 12 months in steel tanks and 20 months in 2.500 lt oak barrels,followed by at least 8 months in the bottle.
Taste Analysis: Cerasa Riserva is an elegant, soft, ruby red wine. It smells of blackand red berries combined with herbal and earthy notes. Ripe tannins and acidityare in perfect balance for a warm and soft taste, with a fresh finish.

Food Pairings: Grilled or braised meats; savoury, spicy vegetables; seasoned cheeses.
