Production area: hilly areas of Basso Sulcis, in the South-West of Sardinia. Clay-limestone soils, Mediterranean climate with mild winters and low rainfall, warm and windy summers.
Guyot trained vineyards, planting density: 5000 plants/ha, average production of 10 tons/ha.
Vinification: Delicate de-stemming and crushing, short cold maceration before soft pressing, cold static decanting, fermentation at 16-18°C. Storage in steel tanks with weekly batonnages for at least 4 months, short refining in bottle.
Food Pairing: Seafood, shellfish, fish soups.
Serving Temperature: 8-10 °C.
Winemaker suggestion: Demà is a fresh and fruity Vermentino di Sardegna doc, excellent to drink young. For more complexity drink after a year
