Wine-making: the containers with the grapes are stored in a cold room until 0°C, then the grapes are pressed and the aromatic precursors are extracted. The vinification in steel tanks at 18°C lasts about 10 days.
Fining: lees stirring for 3 months, then stored in bottle for 1 month
