Production process: to enhance the quality of the raw ingredients, Pastificio dei Profeti uses a processing method that reproduces the techniques of ancient pasta-making: a soft dough, rough bronze extrusion, and slow drying at low temperature.
Suggestions: You can dress this pasta in many ways, taking care not to overpower it. In any case, the unique shape and porosity allow it to capture both simple and more elaborate sauces. A drizzle of extra-virgin olive oil and, if you like, grated pecorino or raw bottarga is already an excellent option.
