SOIL COMPOSITION: Red and sandy soils poor in organic matter with excellent drainage, typical of our coastlines.
BLEND: Typical local grape varieties 85%, Sangiovese 15%.
CLIMATE: Hot and arid in summer, temperate in winter.
HARVEST TIME: Grape harvesting, in regular years, starts in the second half of September and finishes in the first half of October.
VINIFICATION: Fully ripe and healthy grapes undergo fermentation and maceration for about ten days in temperature-controlled stainless steel tanks at 26-28 °C. This is followed by racking, early malolactic fermentation, and subsequent aging in cement tanks to preserve its organoleptic characteristics and bouquet.
ORGANOLEPTIC CHARACTERISTICS: Color: ruby red. Aroma: fragrant and intense, offering a rich variety of sensations with fruity and slightly spicy notes. Taste: it reveals softness and the elegance of the tannins on the palate.
STORAGE: Constant temperature of 17 °C, humidity of 75-80%, protected from light, bottle stored horizontally.
SERVING: Serve in a medium-large glass with a medium-sized opening, at a temperature of 16-18 °C.
GASTRONOMY: Particularly suitable for dishes with fragrant flavors, such as grilled meat and tasty semi-aged cheeses.
