Fior di Sale of Sardinia.
A precious gift of the sea, Fior di Sale from Sant'Antioco blossoms in a unique ecosystem found nowhere else in the world and has been harvested for generations by master Sardinian salt makers. A rare and valuable jewel, it rises to the surface in the height of summer from the waters of the salt pans, is hand-harvested, and left to dry naturally in full respect of the local environment.
A prized ingredient in the kitchen, it is used raw on meats, fish, and vegetables to elevate every dish and enjoy a distinctly Mediterranean flavor.
Used pure or during cooking, it releases a bold salinity. Its most suitable use is on grilled or pan-seared meats and fish. It is also ideal as a finishing salt on tempura dishes and for the preparation of sauces and pinzimonio (raw vegetables with oil). Particularly intriguing is its pairing with certain chocolate-based desserts.
