Harvest: Manual harvest during the second decade of September.

Vinification: A long tradition rooted in the ancient times of the Romans. Some local elders have shared accounts regarding illustrations found in the Roman villa of Santa Filica and the Bacchus mosaic in Sorso, which unmistakably confirm the ancient Roman tradition of immersing freshly harvested grapes in seawater, transported by hand in baskets.

Empirical evidence confirmed the benefits the grape clusters received from contact with the brackish seawater, leading to evident qualitative improvements in the wine regarding salinity, aromatic complexity, and structure. Centuries later, the Sassu Family, owners of the Tenuta Asinara, decided to preserve this tradition tied to the territory. Utilizing technology and a helicopter, they immersed Vermentino grapes in the waters of the Asinara Gulf, resulting in a unique and unrepeatable wine.

A wine born from the oldest traditions, capable of providing a unique tasting experience. Immersion of the grapes, leveraging the saline action of seawater, removed the protective waxy layer (bloom) of the grapes, promoting dehydration and consequently concentrating the aromatic and flavor components. Whole, unstemmed grape clusters were loaded into the press, with soft pressing in total absence of oxygen. Subsequent fermentation took place in 500-liter Tonneau at a stable temperature of 15°C.

Aging: 8 months in Tonneau on fine lees at controlled temperature with bâtonnage, followed by one month of aging in bottle.

Color: Intense straw yellow with greenish reflections
Aroma: Fine and persistent, with notes of ripe white-fleshed fruit and iodine, alternating with subtle spicy hints.
Taste: The direct effect of the sea salt pleasantly enhances the wine's salinity, perfectly balancing with the softness derived from aging in Tonneau.
